One of Madrid's best potato salads: from a hospital to the street

Madrid, Apr 28 (EFE).- Madrid-based chef Xandra Luque is the head chef at the capital’s branch of the University of Navarra Clinic and winner of the 2021 Best Russian Salad award in the Community of Madrid; a dish that could previously only be enjoyed in a hospital and is now being served to the public at the Madrid Food Fest event in the capital.

A spherification of green Manzanilla olives, potatoes poached over very low heat, a beautifully marinated bonito in a natural apple cider vinegar brine, and free-range eggs make up the recipe for this award-winning salad, which, until now, could only be eaten by patients and their companions at the University of Navarra Clinic and was awarded a prize in 2021 by the Association of Chefs and Pastry Chefs of Madrid (ACYRE Madrid).
